Grandma's Boiled Frosting

DSC_0126.JPG

Growing up this was my absolute favorite frosting!  To this day it still holds a piece of my heart.  I have so many good memories involving this frosting.  Some great memories baking cakes with Grandma and some many birthday cakes.  I remember grandma teaching me how to make this frosting for the first time and how proud I was to show her that I could make it on my own.  Sure I was probably 13 years old and baking anything was exciting but this frosting was extra special.  I’m so thankful I have mastered this recipe so I can pass it down to my children one day.

Do note that this is a tricky frosting and if it doesn’t come out just right it still tastes good but might just run off you cake.

I start by adding water and sugar to a saucepan on medium heat.  I stir on and off, bring the mixture to a boil.  Once the mixture is at a boil stir continually.  While working on the sugar water I like to start to beat the egg whites.  I beat the egg whites until they are stiff.

Then I go back to the sugar water.  I start by dipping a spoon into the sugar water and seeing how the sugar water runs off the spoon.  It is done when drips into a shape of a piece of hair.  Be very carful not to over cook the sugar water because then you will get a burnt taste.

Right before the sugar water looks done I like to re-beat the egg whites to make sure they are nice and stiff.  Once you get the sugar water just right add it the stiff egg whites. Lastly I add the vanilla and frosting a cooled cake right away.

It works best if used right away and it taste so good that you are not going to want to wait!!
