Almond Sugar Cookies

Here it is my all time favorite cut out cookie recipe! It has changed my life. I can no longer eat normal sugar cookies; they just don’t taste as good.  And when your watching how much your eating during the holiday season its hard to justify eating a plain Jane cut out cookie.  On the other side of things you will have to remind yourself that the scale will not lie if you eat a dozen cut out cookies in a day.

So here you have it my all time go to, favorite recipe for anytime cut out cookies.  I start by combining the wet ingredients in a large mixing bowl.  I mix all by hand mostly because it makes so much dough that it tends to over flow my kitchen aid.  (Maybe time to purchase a larger one, it is Christmas season, hint, hint husband if your reading this)  Then I stir in salt, baking powder, and corn starch.  Once all combined I slowly stir in white flour and cake flour.   Then cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This is important if you skip this step you will end up with cut out cookies that don’t hold there shape and look nothing like the intended shape.  So be patience.

When its time to roll out the dough I preheat the oven to 350 degrees and line the cookie sheet.  Next sprinkle some flour the table and roll that dough.  I like thicker cookies so I tend to roll the dough to about ¼ inch thickness.  Cut out the cookies and place them on the cookie tray.  Bake for about 7 to 9 minutes.  Cookies will still be light colored.  Do not over bake.  Once cookies are baked allow to cool then eat or add frosting.

Almond Sugar Cookies

Ingredients

1 ½ cup white sugar

2/3 cup butter, cold, yet soft

2/3 cup shortening

2 eggs

2 teaspoon almond extract

2 ¾ cup cake flour

1 cup flour

1 tablespoon corn starch

2 teaspoon baking powder

pinch of salt

 

Directions

In a large bowl combine sugar, butter, shortening, eggs, and extract

Add salt, baking powder, and corn starch

Stir in normal flour

Stir in cake flour

Chill dough for 30 minutes

Roll out dough and cut into fun shapes about ¼ inch think

Bake at 350 degrees for 7 to 9 minutes

Allow to cool before frosting enjoy
