Bacon Jalapeno Poppers

A little Twist on Jalapeno Poppers

 

            Tonight for dinner we thought we would relive our college days were we didn’t count calories and didn’t worry about what would sit well in our stomachs.  Because lets face it the younger version of you could eat just about anything and its fun to be able to indulge now and then.  My husband and I were coming up with appetizer ideas and decided to make a whole meal out of appetizers.  One of his favor appetizers is jalapeño poppers, so I thought why not make them but make them better.  And what’s the best way to make any food better?... you guessed it add bacon!! I took the classic idea of an jalapeno popper and added bacon to each and every one of them.  You can thank me later once you have tried the new and improved poppers. 

            First I started with store bought wontons wraps.  They’re the perfect size and shape for wrapping poppers.  Your also going to need: softened cream cheese, Parmesan cheese, sharp cheddar cheese, 8 jalapenos cut in quarters lengthwise seeds and membranes removed, cooked (not to crispy) thick sliced bacon, canola oil, salt and pepper.

            I filled a saucepan just under ½ way full of canola oil and set it a side.  That is how I deep-fried the jalapeno poppers.  You can choose to take a healthier route and bake the poppers at 400 degrees for 10-15 mins under golden brown and cheese starts to ooze out the sides.  But as I said earlier we were looking forward to a good cheat meal so we went all out and fried the poppers. 

            In a medium bowl mix the cheeses, salt and pepper under well blended.

            Next I set up a little assembly station where I assemble each popper.  Starting with one jalapeno place a nice scoop of the cheese mixture in it then add the bacon of top.  Place the whole thing on the wonton and wrap.  Use water to seal the sides of the wonton and then take a second wonton wrapper and wrap that around the popper as well. 

            If deep-frying, place poppers in the oil for 3-5 minutes until golden brown.  If you are going to bake the poppers make sure to spray non-stick spray to baking sheet before placing poppers on the sheet.   You can also use egg wash over the poppers to make them golden brown if you are baking the poppers.

½ cup Parmesan cheese

¼ cup white cheddar cheese

pinch of salt

¼ teaspoon pepper

8 strips of cooked thick sliced bacon

canola oil
