Peach Galette Pie

Ok, I love a good simple dessert! And this cannot get any simpler or more delicious!  I love peaches so when it is peach season I make it a priory to have as many peaches as I can get anyway possible.  I have peaches in my oatmeal, sliced in my cereal, a peach for a snack, and peach dessert everything!  There that good I look forward to peach season every year! So much so that I still have a blueberry peach pie in our freezer from last year.  Its still there not because I don’t want to eat it but because I keep telling myself that it is a back up dessert for when we are going somewhere and I need a knock your socks off dessert in a pinch.  Now that peach season is here I can finally eat that pie and restock!  Oh man I’m getting hungry just thinking of restocking my blueberry peach pie inventory.

Anyways this peach slab pie is super simple and super delicious. If you don’t want to spend much time at all but want a truly delicious dessert this is the one.  All you need is 3 peaches, 1 pastry puff, ½ tablespoon cornstarch, ¼ cup sugar, 1 teaspoon of cinnamon.

First I peeled the skin off the peaches and sliced them.  Peeling the skin off of peaches is tedious but with time and a ripe peach they come off.  I’m not a big skin person but if you are feel free to leave them on.

I preheated the oven to 350 degrees then rolled the pastry dough out on a cookie sheet that was sprayed with non-stick spray.

Next in a small bowl combine peaches, cream of tarter, sugar, and cinnamon.  Then you are going to lay the mixture on top of the pastry dough.  Leave about an half of an inch from the edge of the dough so you have room to roll the dough back in on it self.  Once all the edges are rolled in its ready to go in the oven.  Bake for about 15 minutes or until dough edges are golden.  Serve warm with Ice cream or cold for breakfast ;) refrigerate leftovers!
