Chicken Jalapeno Popper Soup

Here is the recipe that every family member of mine wants.  I can’t tell you how many times I’ve been asked for it.  Which is surprising because we are not a big soup family.  Usually our family main dish is meat and potatoes we barely ever have soup or salad served at a get together. 

 

When my husband and I moved into our very first house we decided to throw a Halloween party to celebrate our home and the holiday.   Living in western new york I needed to come up with a menu that had some heat to it to keep everyone from freezing in our garage.

 

This soup is just that serve hot/ warm and you can control how much heat you add to it by how much red pepper flakes you add.

I start this recipe in a large soup pan sautéing onion, jalapenos, and garlic in olive oil.  While that is sautéing I get out a large bowl and place all the chicken into the bowl.  Next I season the chicken with cumin, chili powder, oregano, and red pepper flakes.  Depending how spicy you want the soup add more or less red pepper flakes.

Once onions are tender I add the chicken to the soup pan, followed by chicken broth and tomatoes.  Stir together then add all the drained bean, chopped bacon, and corn.   Simmer the mixture for 30 minutes, covered.  Lastly stir in cream cheese until melted and season to taste with salt and pepper.  Serve soup hot with bread and you won’t be disappointed.

Chicken jalapeno soup

Ingredients

2 tablespoons Olive oil

1 medium Onion, diced

6 jalapenos, diced and unseeded

6 cloves Garlic, minced

6 cooked Chicken breast, diced

1 teaspoon Cumin

2 teaspoon Chili powder

1 teaspoon oregano

Pinch red pepper flakes

1 can Tomatoes, diced with mild chiles

12 oz Chicken broth

1 bag frozen Corn

2 cans Navy beans

1 can Pinto beans

1 lb bacon, cooked and diced

8 oz cream cheese

salt and pepper to taste

 

Directions

In a large sauce pan sauté onion, jalapenos, and garlic in olive oil

In a large bowl season cooked chicken with cumin, chili powder, oregano, and red pepper flakes

Once onions are tender add chicken to sauce pan

Add chicken broth and tomatoes

Add beans, bacon, and corn

Simmer for 30 minutes

Add cream cheese, stir until melted

Add salt and pepper to taste
