Loaded Potato Salad

This past weekend we were invited over for dinner at our close friends house.  It has been a tradition over the past years to get together multiply times a year and have dinner.  Some times we dine out and others we get to try new recipes and dine in.   Since my dear sweet friend is 9 months pregnant I wanted to make something extra special when she and her husband invited us over for a Sunday BBQ. 

 

As a group we love almost all food, in fact I think the four of us combined can eat anything.  Past BBQ I have made numerous side salads.  This time I thought I would turn it up a notch and make loaded potato salad.  I’ve seen recipes floating around pinterest and thought what a great idea.  I bet I could make it simpler!

 

First I started by washing 10 medium red potatoes.  They don’t have to be medium; some small so large doesn’t make a difference.  Just make sure they’re not all small or all large ;)

Dice the potatoes into half-inch squares and put in a pot to boil.  You’re going to want to boil the potatoes until it is easy to put a fork through them but not so easy that their turning to mush.  I forgot to mention to leave the skins right on the potatoes.  See simple!!

 

While the potatoes are cooking you can cook the bacon.  I used a cooking sheet sprayed it with non-stick cooking spray and laid the bacon on the sheet.  Baked 400 degrees for 20 mins (until nice and crispy).  My friends and I are huge bacon fans so I used the entire pound. 

 

Once the bacon is cooked add ¾ of the pound to the serving bowl.   I crumbed the bacon so every bite had some.   The remaining pieces will be crumbed up and sprinkled on top.

Next I chopped a small onion added it right to the serving bowl.  Once the potatoes are done you can drain and add those to the serving bowl as well.  Now for the delicious dressing.  In a small bowl combine 1 cup of sour cream, ½ cup of mircowhip, and salt and pepper to taste.  Pour over potatoes, onions, and bacon.  Next added 2 cups of shredded cheddar cheese and mix.  Once everything is combined sprinkle remaining bacon and cheese on top.  Last but not least chop some green onions and sprinkle on top.  That’s it, so easy and so delicious!!! 2 ½ cups cheddar cheese

1 pound bacon

1/8 cup green onion

1 cup sour cream

½ cup mircowhip

2 tsp pepper

salt to taste
