Summer Salad

We had my in laws over for dinner the other night and I was looking for a side dish to go with BBQ pork tacos and thought yay, I know just the thing.  What is better in summer?  Summer salad because all the ingredients are fresh off the farm and delicious.

I call this salad summer salad because everything about it is summer.   That’s the best part.  I still make the salad through out the year but its always better in summer.  Mostly because it’s so light and refreshing.  No one wants to feel heavy in the middle of a heat wave.

All the ingredients can either be picked out of your own garden or found at your local farmers market.  That’s the great part!  There is only one exception and that is avocadoes. If you’re from western New York like I am then you know avocadoes are not from around here.  One thing I truly envy from my friend who lives in California is how cheap avocadoes are and the fact that she can get them anywhere at anytime.

Anyways if your looking for a truly refreshing summer salad this is it!  Head to your garden and gather 5 roma tomatoes, 1 cucumber, 1 small red onion, and cilantro.  You are also going to need 2 avocadoes and 1 lemon.  You could you lemon juice but the real thing makes this salad soooo much better.

Chop, Dice, and cut all ingredients except for the lemon.  Mix chopped ingredients into a bowl.  Lastly I rolled the lemon on a hard counter top to help release the juices inside.  Lastly squeeze the lemon over the bowl and add a pinch of salt and pepper.  You may use as much salt and pepper as you prefer.   This salad is so simple and fast to make which helps make it a go to must for your summer parties!!

Summer Salad

Ingredients

2 avocados

5 roma tomatoes

1 English cucumber

1/8 cup cilantro

1 lemon

small red onion

salt

pepper

 

Directions

Cut avocados into cubes

Quarter cucumber

Dice Onion

Cut tomatoes into cubes

Add all into a large mixing bowl

Finely chop cilantro and add to bowl

Roll lemon then slice in half and squeeze the juice into the mixing bowl

Mix all ingredients

Add a pinch of salt and pepper

Enjoy
