Cinnamon Cookies

Cinnamon cookies are here.  Who would have thought cookies that where cinnamon would taste so good.  I’m more of a cake person with a sweet, sweet tooth.  These cookies satisfy your sweet craving in cookie form.  Along with sweet cookies they are easy to make and don’t require any chilling time.  Which who has time for that?!?

I start by preheating oven to 350 degrees.  This I combine wet ingredients in large mixing bowl.  Wet ingredients include butter, sugar, eggs, and vanilla extract.  Then I add salt, cinnamon, cornstarch baking soda, and flour.  Once everything is combined I stir in the chocolate chips.  Depending on your taste buds you can use chocolate or white chocolate chips.  I’ve done both and love each variation.

Place about 1-½ tablespoons of cookie dough about 2 inches apart on baking sheet and bake for 7-8 minutes.  Allow too rest for 2 minutes before transferring to cooling rack.

In small bowl place remaining chocolate chips and coconut oil in microwave for 30 seconds at a time; stir in between until chocolate is melted. Then drizzle over cookies.

Cinnamon cookies

 

Ingredients

1 cup Butter, softened unsalted

 1 ½ cups Brown sugar

2 Eggs

½ teaspoon Salt

2 ½ teaspoons Cinnamon

1 ½ teaspoons Vanilla extract

2 tablespoons Cornstarch

1 teaspoon Baking soda

2 ¼ cups Flour

12 oz White chocolate chips, divided

1 ½ teaspoons coconut oil

 

Directions

Preheat oven to 350 degrees

In large bowl combine butter, sugar, eggs, and extract

Add salt, cinnamon, cornstarch, baking soda, and flour

Stir in 6  oz of chocolate chips

Place about 1 ½ tablespoons of cookie dough about 2 inches apart on baking sheet

Bake 7-8 minutes

Allow to rest for 2 minutes before transferring to cooling rack
