Strawberry Shortcake

Strawberry shortcake is one of my favorites because it takes me back to my childhood.  I love strawberry picking in the field.  My favorite part about picking strawberries as a child is that you would eat more then you filled your basket.  Now a day I might have a berry while picking but my conscious stops me from filling my cheeks with out paying for the berries first.

This strawberry shortcake is to die for.  It is by far the best recipe I’ve tried yet.  Mostly because it takes your basic strawberry shortcake recipe and makes it over the top with the best whipped cream frosting.  I call it frosting but not to worry it is very light and fluffy and trust me you will want more and more.

 

I started by making shortcake biscuits and setting them aside.  Next I sliced up 2 quarts of berries and added sugar to them.  I prefer to let the berries soak up all the sugar and become nice and juicy.  While the berries were juicing I made the frosting.

 Whipped the heavy cream until it was thick and formed stiff peaks.  Then I added the softened cream cheese and beat them together.  Then I added the vanilla and powdered sugar.  Once everything is combined I assembled and enjoyed!

 

Do note that you may want to eat the left over for breakfast and that’s ok ;)

Strawberry Shortcake

 

Ingredients

 

2 quarts of fresh picked strawberries

Your favorite biscuits ( I prefer Bisquick shortcake biscuits)

½ cup of sugar

8 oz cream cheese, softened

1 ½ cup heavy cream

1 teaspoon vanilla

¾ cup powder sugar

 

Directions

 

Wash then slice strawberries in to a medium bowl

Add ½ cup of sugar and mix, set aside

In another bowl beat 1 ½ cup heavy cream until thick

Add cream cheese

Once combined add vanilla and powdered sugar

Assembly shortcake when you are ready to eat

Take 1 biscuit add a generous spoonful of strawberries on top and top with whipped cream frosting
