Brownie Cheesecake Bars

Brownie cheesecake bars are amazing, the name should have already clued you into how amazing they really are. I love brownies and cheesecake! These bars combine to great loves to create an amazing treat. One reason I really love them is they don’t take to long to make, unlike a full cheesecake.

First preheat your oven to 350 degrees then line a 13x9 glass pan with parchment paper sprayed with non-stick spray. Next i started on the brownies, since they have to cook first. In a large bowl I combined sugar, brown sugar, butter, cocoa powder, vanilla extract, eggs, egg yolk, and corn syrup. Then I added salt, cornstarch, and flour. I found it easier to use a mixer to combine ingredients rather then stirring by hand. Either way works. To add a little extra treat in the brownies I like to add chocolate chips, about a cup is perfect. Once every thing is combined bake for about 25 minutes.

 While the brownies are baking it is time to prepare the cheesecake batter. Do not wait because as soon as the brownies come out of the oven the cheesecake batter goes on top and back into the oven the pan goes. In a large bowl add cream cheese, sugar, and vanilla extract.   Mix with a stand mixer or hand mixer. Once combined slowly add one egg at a time.  Mix until fully combined.

 Once brownies are baked remove from oven, change oven temperature to 325 degrees.  Pour cheesecake batter over baked brownies, smooth evenly with a spoon or off set spatula. Place back in oven for about 40-45 minutes until cheesecake center is almost set. Allow the pan to cool completely before placing in the refrigerator. Refrigerate for at least 4 hours before cutting into squares. I know it will be hard to wait but it will be so worth it!

Yields: 24 bars


Cheesecake:                                                          

½ cup sugar                                                             

16oz cream cheese ½ tsp. vanilla extract

2 eggs

                                                                       

 

Brownies:                                                                 

1 cup sugar                                                               

10 tbsp. Butter, melted

1/3 cup brown sugar                                              

½ tsp. vanilla extract

¾ cup cocoa powder                                                

1 tbsp. corn syrup

2/3 cup flour                                                           

  2 lg eggs

1 tbsp. cornstarch                                                    

1 lg egg yolk

¼ tsp. salt
