Cowgirl Cookies

Cowgirl cookies go by many different names like; cowboy cookies or kitchen sink cookies to name a few.  I personally like the name cowgirl cookies probably because I feel I am a cowgirl after spending my whole life on and around horses.  I just wish I had known about these cookies as long as I have known horses.  They are truly my favorite cookie and the one cookie my husband asks me to make so he can take them to work and share.  I hear they travel well in pockets.  Not that I would suggest this.  But have heard that my husband’s co-workers like to stuff their pockets with cowgirl cookies to make sure they have enough for their whole shift. 

 

Start by making the cookie dough use a large mixing bowl combine butter, sugars, egg, and vanilla extract. Then mix in flour, salt, and baking soda.  Combine oats next.  I then fold in chocolate chips and pecans.  Lastly I add cereal.  I do this last so I don’t crush the cereal with all the mixing.  Once everything is combined I cover the bowl with plastic wrap and refrigerate for 2 hours or over night.  Don’t skip the chilling process or your cookies will turn out very flat. 

 

Once your dough his chilled it is time to bake!  Using a kitchen spoon place balls of dough on a cookie sheet lined with parliament paper.  Bake at 350 degrees for about 11 minutes.  I like to allow cookies to cool on cookie sheet for a few minutes then transfer over to cooling rack.  Enjoy!

Cowgirl Cookies

Yields: 14 large- 24 small

 

½ cup Brown Sugar                                                 

1 Egg

¼ cup Sugar                                                             

½ cup Butter, softened

1 cup Flour                                                               

2 tsp. Vanilla Extract

1 cup Oats  

1 tsp. Baking Soda                                

Pinch of Salt

1 cup Chocolate Chips 

¾ cup Cereal 

¾ cup Coconut 

½ cup Pecans                                                                       

 

 

STEPS

 

Step 1.  In a large mixing bowl combine butter, sugars, egg, and vanilla extract.

 

Step 2.  Mix in flour, salt, and baking soda.

 

Step 3.  Add oats

 

Step 4.  Fold in chocolate chips

 

Step 5.  Next fold in pecans

 

Step 6.  Lastly fold in cereal

 

Step 7.  Cover bowl and refrigerate for 2 hours.

 

Step 8.   Using a kitchen spoon place balls of dough on a cookie sheet lined with

  parliament paper. 

 

Step 9.   Bake at 350 degrees for about 11 minutes.

 

Step 10.  Enjoy!!
