Yellow Cake
I recently took a family poll on what birthday cake each family member prefers and not surprisingly the men in my family prefer yellow cake with chocolate frosting. This is my go to recipe for yellow birthday cakes. It’s fluffy and moist, making it perfect for chocolate frosting.
Preheat oven to 350 degrees. Then in a large bowl whip butter and sugar until light and fluffy. Then I add the eggs in one at a time. I found that the kitchen mixer is the easier way to mix this cake batter. After the eggs add sour cream, almond extract, and vanilla extract. Next I like to sift in the dry ingredients so there are no clumps in the cake batter and every bite is smooth and rich. I let the kitchen mixer run on low and sift in the baking powder, baking soda, salt, and cake flour.
Then divide batter evenly between two cake pans and bake for about 30 minutes until the cake passes the tooth pick test. You can also fill cupcake tins ¾ way full and bake for about 22 minutes.
Lastly wait till cake is completely cooled before frosting and decorating.
Yellow cake
Ingredients
¾ cup Butter, room temperature
1 ½ cups Sugar
3 Extra large eggs, room temperature
2 teaspoons Vanilla extract
1 teaspoon Almond extract
1 ¼ cups Sour cream, room temperature
2 ½ cups Cake flour
2 teaspoons baking powder
½ teaspoon Baking soda
½ teaspoon Salt
Directions
Preheat oven to 350 degrees
In a large bowl whip butter and sugar, until fluffy
Add in eggs, sour cream, and extract
Next sift in dry ingredients
Cake flour
Baking powder
Baking soda
Salt
Pour into non-stick sprayed cake pan and bake for 30 minutes until it passes tooth pick test
